Object Description
This is a 13.75 inch boning knife with a dark wooden handle.

The handle is shaped straight across the top with slight ergonomic curves across the bottom and butt to accommodate fingers and better gripping.  The tang is held in place with three large metal rivets.

The blade is very thin, starting out the same width as the handle.  It quickly becomes even more slender until it becomes about half of its original width.  The blade continues to the end with a well-defined bevel and finishes with a sharp spear-like point.

This knife has the expected rough patina of an aged and often used kitchen utensil showing some discoloration, stains and touches of rust.
Origin
Donated by Mary G. Gatsis. Knives from a restaurant owned by her father, George J. Gatsis.
